密集烤房與普通烤房烘烤中煙葉色素和多酚含量的變化分析

摘 要:為了探討密集烤房與普通烤房烘烤過(guò)程中煙葉色素和多酚類(lèi)物質(zhì)含量的變化差異,測(cè)定了烘烤過(guò)程中關(guān)鍵溫度點(diǎn)的色素含量、多酚氧化酶活性和多酚類(lèi)物質(zhì)含量。結(jié)果表明,密集烤房與普通烤房烘烤過(guò)程葉綠素總量、葉綠素a和葉綠素b含量變化差異較小。與普通烤房相比,密集烤房烘烤過(guò)程中類(lèi)胡蘿卜素含量總體較高;類(lèi)葉比則表現(xiàn)出先升高后降低的變化趨勢(shì),烘烤結(jié)束時(shí)密集烤房的類(lèi)葉比較高。密集烘烤過(guò)程中多酚氧化酶活性較低,多酚類(lèi)物質(zhì)含量較高,說(shuō)明密集烘烤烤后煙葉趨于變黃充分,不易發(fā)生棕色化反應(yīng),有利于煙葉烤黃。

Change Difference of Pigment and Polyphenol Contents between Bulk-curing Barn and Traditional Flue-curing Barn during Curing Process

Abstract: Experiments were conducted to explore the change differences of pigment and polyphenol substances contents between bulk-curing barn and traditional flue-curing barn during curing process. The experiment measured pigment contents, polyphenol oxidase activities and polyphenols contents at critical temperature points during curing process. The results showed that contents of total chlorophyll, chlorophyll a and chlorophyll b had little differences between the two curing processes. Bulk-curing barn had more carotenoid contents during curing process. The ratio of carotenoid and chlorophyll increased firstly and then decreased, and at the end of curing process, the ratio of carotenoid and chlorophyll was high. During bulk-curing barn curing process, polyphenol oxidase activities were lower and polyphenol substances contents were higher than traditional flue-curing barn. Therefore, flue-cured tobacco leaves in bulk-curing had higher yellowing degree, less browning reaction, and in favor of tobacco leaves turning yellow.

煙葉烘烤是色素等大分子物質(zhì)降解轉(zhuǎn)化及香氣物質(zhì)生成的復(fù)雜生理生化變化過(guò)程[1]。烘烤過(guò)程中的生理生化變化對(duì)烤后煙品質(zhì)有決定性影響,色素是香氣物質(zhì)形成的重要前體物質(zhì)[2],多酚氧化酶活性與多酚類(lèi)物質(zhì)含量影響煙葉的顏色、吃味和香氣等。因此,研究煙葉烘烤過(guò)程中色素與多酚類(lèi)物質(zhì)含量的變化對(duì)烤后煙的提質(zhì)增香具有重要意義。密集烤房已在各煙區(qū)推廣,密集烘烤具有操作簡(jiǎn)
